Ingredients to make Chinese Vegetarian Rice Congee/ Brown Rice & Gai Lan Jook/Xi Fan

  • 8 cups of water
  • 2 cups vegetable broth
  • 1 cup long grain brown rice
  • 1 inch ginger (sliced into two pieces)
  • 2 cups Gai lan/ Chinese Broccoli (thinly sliced)
  • salt as per taste
  • White pepper as per taste
  • 1-2 tbsp Scallion (chopped for topping)
  • Few salted peanuts (for garnishing)

How to make Chinese Vegetarian Rice Congee/ Brown Rice & Gai Lan Jook/Xi Fan

  1. Take the water, vegetable broth, long grain brown rice, ginger, salt together in a large heavy bottomed sauce pan, bring it to boil and put the flame to a medium heat.
  2. Cook it uncovered in a low flame until the rice gets cooked well and the mixture turns creamy.
  3. Now turn off the heat and add in the gai lan. Simmer and cook until the gai lan is half cooked. Add in the white pepper and salt (if needed).
  4. Serve it warm with chopped scallion and peanuts on top.
