ABOUT Chinese Vegetarian Rice Congee/ Brown Rice & Gai Lan Jook/Xi Fan RECIPE

Congee is a savoury rice porridge which exists in many versions around the world. This dish is known as Jook by it's Cantonese name, while in the Chinese provinces it is known as a Xi fan which literally means watery rice. This rice porridge aka Congee is quite popular especially in many Asian countries and the word Congee is derived from the Tamil language.

Ingredients Serving: 3

  1. 8 cups of water
  2. 2 cups vegetable broth
  3. 1 cup long grain brown rice
  4. 1 inch ginger (sliced into two pieces)
  5. 2 cups Gai lan/ Chinese Broccoli (thinly sliced)
  6. Salt as per taste
  7. White pepper as per taste
  8. 1-2 tbsp Scallion (chopped for topping)
  9. Few salted peanuts (for garnishing)

Instructions

  1. Take the water, vegetable broth, long grain brown rice, ginger, salt together in a large heavy bottomed sauce pan, bring it to boil and put the flame to a medium heat.
  2. Cook it uncovered in a low flame until the rice gets cooked well and the mixture turns creamy.
  3. Now turn off the heat and add in the gai lan. Simmer and cook until the gai lan is half cooked. Add in the white pepper and salt (if needed).
  4. Serve it warm with chopped scallion and peanuts on top.
