Schezwan Sauce

Ingredients to make Schezwan Sauce

  • 100 ml veg oil
  • 100 gm red chilli paste
  • 75 gm chopped garlic
  • 25 gm ginger paste
  • 2 tbsp chopped celery
  • 2 tbsp vinegar
  • 1/2 cup water
  • salt as per taste

How to make Schezwan Sauce

  1. Take a pan and heat oil on a high flame.
  2. Once the oil is heated, add in the garlic paste and stir till it's light brown in colour. Now add in the ginger paste and stir, then add in the celery and mix well.
  3. Next add in the chilli paste and mix it well. Let it cook for 1 minute.
  4. Pour in 1/2 cup of water, vinegar, salt and mix it well. Cover with a lid and let it cook for 5-10 mins on a low flame till the water is absorbed.
  5. Schezwan sauce is ready and can be eaten hot or cold with any Chinese dishes.

My Tip:

Store it in a glass jar and it will stay good for 3 months. To make the chilli paste, soak red seedless chillies in a cup of water for 30 mins.Then drain the water and grind it into a smooth paste.
