Orange Marmalade Cake

Ingredients to make Orange Marmalade Cake

  • 1 - cup curd
  • 1 & 3/4 - cup flour
  • 2 tbs - orange marmalade
  • 2 tbs - brown sugar
  • 1 tsp - baking soda
  • 2/3 cup - sugar
  • 3/4 - cup refined oil
  • a pinch of orange/red colour
  • 2-3 drops - orange emulsion or essence
  • 6 tbs - orange juice (fresh or tetra pack)
  • 1 tsp - lemon juice
  • 1/2 tsp - lemon or orange rind
  • For the Sauce:
  • 175 gms - icing sugar
  • orange juice - Left over

How to make Orange Marmalade Cake

  1. Beat all the wet ingredients (curd,marmalade,oil,orange colour,essence,juice,rind)
  2. Add the brown sugar and sugar, beat in a mixer for 2-3 minutes.
  3. Sieve together all the dry ingredients (flour and baking soda)
  4. Pour the liquid mix into the dry mix and mix with a wooden spatula, stirring in one direction.
  5. Add more juice if you feel you want the batter a little more runny.
  6. Bake in a pre-heated oven at 200°C for 20 minutes.
  7. For the sauce: mix together 175 gms icing sugar and orange juice. Add enough to make the icing thick and runny.
