Ingredients to make Cheese Banana Toffee Fritters

  • Self rising flour - 50 gm
  • Rice flour - 20 gm
  • Corn flour - 25 gm
  • Grated cheese - 4 tablespoons
  • peanut oil - 2 cups
  • sugar - 2 cups
  • Ripe banana - 2 nos
  • Roasted sesame seeds - 4 tablespoons
  • Cold water - 100 ml

How to make Cheese Banana Toffee Fritters

  1. To prepare the batter, whisk together the self- raising flour, corn flour, rice flour, grated cheese and the cold water. Mix until a smooth batter is formed then add in 1 tablespoon of peanut oil.
  2. Fill a wok with 1/3rd full of peanut oil and heat it to a medium temperature.
  3. Toss the banana slices in the extra flour to lightly coat it.
  4. Using a bamboo skewer, dip each banana slices into the batter and cook it in the hot oil in batches until they are golden and crisp. Then drain on a paper towel.
  5. Place the sugar in a large heavy bottomed pan over a medium heat and cook while shaking the pan occasionally until a caramel forms.
  6. Remove from the heat then work quickly, one at a time add the fried banana to the caramel and turn to coat.
  7. Drop it into a large bowl of iced water to set the caramel. Drain it immediately, then sprinkle roasted white sesame seeds on top and serve it with a white chocolate mousse.
