Ingredients Serving: 3

  1. For the Yeast Mixture:
  2. Dry Yeast- 1 tsp
  3. Warm water- 1/2 cup
  4. Sugar- 1/2 tsp
  5. Wet ingredients:
  6. Milk- 1/3 cup
  7. Vanilla essence- 1/2 tsp
  8. Egg- 2 nos
  9. Unsalted melted butter- 1/4 cup
  10. Dry Ingredients:
  11. All purpose flour- 2 cups
  12. Salt - 1/4 tsp
  13. Nutmeg- a peanut sized (in powder form)
  14. Oil- for deep frying
  15. For coating:
  16. Sugar- 1/2 cup
  17. Cinnamon - 1/2 inch piece - 1 no

Instructions

  1. In a bowl, add in the yeast, warm water, sugar and mix it well. Let the mixture rest for 10 mins.
  2. In another bowl, beat the eggs well till bubbles form, then add in the milk, vanilla, melted butter and mix it well.
  3. Now add the above wet mixture to the yeast mixture and mix well. Keep it aside till use.
  4. In a wide bowl, add in the flour, salt, nutmeg powder and mix without any lumps. Make a well in the middle and pour in the yeast wet mixture and mix to form a soft dough (the dough may look little watery no need to worry). Cover the bowl and keep it in a warm place for 2 hours or till the dough doubles in size.
  5. After 2 hours, make the dough into medium sized balls and keep closed for 15 more mins.
  6. After 15 mins, heat oil in a wide kadai and deep fry each ball till it turns dark golden brown in colour. Then drain the oil in kitchen towels.
  7. Powder the cinnamon and sugar to a fine powder form and spread it on a wide plate. Take each fried ball and roll it in the sugar powder and serve it hot. (Note that the balls must be warm when rolling in sugar powder.)
  8. Enjoy warm,soft and puffy malasadas with a hot cup of tea.
