ABOUT Chicken Bone-in Fried Rice..My Idea RECIPE

Fried rice and whole chicken fused together to create an awesome combo. Extremely delicious and a perfect dish for any kind of parties. It has been made just like a fried rice with the addition of favourite veggies and merged with chicken bone-in and hence named it thus. Absolutely yummy and delectable spread to liven up any party or family get togethers. Check this out and happy cooking everyone.

Ingredients Serving: 6

  1. Basmati rice or any good quality rice 750 gm
  2. Veggies of your choice chopped into fine cubes 400 gm
  3. Chicken bone in 1500 gm
  4. Salt to taste
  5. Chilli garlic sauce 2 tbsp
  6. Black pepper a tbsp
  7. Chilli flakes a tbsp
  8. Lemon juice 2 tbsp (optional)
  9. Coriander finely chopped to garnish
  10. Oil about 5 tbsp
  11. Green onions finely chopped 1 bunch
  12. Cumin seeds a tbsp
  13. Bay leaves 2
  14. Ghee or butter 2 tbsp for the zeera rice
  15. Whole masalas like cinnamon, black pepper, cloves and nutmeg as desired to be added in the rice.

Instructions

  1. In a pan, heat oil. Then add the onion, minced garlic and saute for a minute. Once this is done, add in all the veggies, chicken and stir fry for atleast 10-12 mins. Then cover the lid and let it simmer on a low flame.
  2. Meanwhile, in a cooking pot add butter or ghee. To this, add in the cumin seeds and bay leaves. You can also add other whole masalas such as cinnamon, black pepper, cloves and a pinch of nutmeg.
  3. After about a minute, then add in the soaked and drained rice. (The rice shouldn't be soaked for long. The more it gets soaked, the more delicate the rice will be.)
  4. Next, add water. (As easy this step may seem , it is the place where many of us tend to go wrong. Water should always be added proportionally. For one glass of rice that has been drained and soaked, 2 glasses of water will be required. This is the correct proportion.)
  5. Once you have done that , mix up the rice ever so gently so that everything is well mixed up. Wait till the water boils before covering the pot with a lid. Don't overmix or the rice will break.
  6. Cook the rice at a high flame for the first 5 mins, then lower the flame and let it cook for about 10-15 mins. (The rice will cook for approximately 20-25 mins.)
  7. After the rice is done, transfer the chicken to the pot and mix well. Allow this to stand for another 5 mins before serving.
  8. This awesome fusion can be served with any Indian dish with gravy or chicken manchurian or any Chinese side dish as well.
