An amazing lemony flavoured Cupcake.

Ingredients Serving: 6

  1. All purpose flour/ Maida- 1 + 1/4 cup
  2. Curd - 1 cup
  3. Olive oil - 1/4 cup
  4. Caster sugar - 3/4 cup
  5. Baking powder - 1 tsp
  6. Baking soda - 1/2 tsp
  7. Lemon juice - 2 tbsp
  8. Lemon zest - 2 to 1+1/2 tbsp
  9. Salt- a pinch

Instructions

  1. Mix and melt the caster sugar in a cup of curd with the help of a hand blender. Add the baking powder, baking soda and a pinch of salt to the mixture and mix well. In another bowl, take the all purpose flour/ maida and sift it twice.
  2. Now preheat your oven to 180 degrees temperature.
  3. Add 1/4 cup of olive oil, lemon juice and lemon zest into the curd mixture and mix well. Then add flour in the curd mixture gradually and mix it properly. At this stage add 1 to 2 tsp butter milk if required to get the proper consistency.
  4. Take your cup cake moulds, line it with paper cups. Then pour the cake mixture in it. Fill it up to 3/4. Now your cup cakes are ready to go in the oven. Just after placing it in oven, reduce the temperature to 160 degrees. Bake your cup cakes for 15 to 20 minutes.
  5. Check you cup cakes with the help of a tooth pick. If it comes out clean, then your cup cakes are ready. If not then bake for another 2-3 minutes.
  6. Take it out of oven. After 5-10 minutes, demould your cakes and let them cool on a wire rack till it gets to room temperature.
  7. Enjoy this very refreshing lemony flavoured cupcakes with tea.

Have u used yellow food colour ? Otherwise how we shud get this colour?
