ABOUT Schezwan sauce RECIPE

The famous sauce from Indo-Chinese cuisine with a strong aroma and bright colour.

Ingredients Serving: 10

  1. Dry Red Chillies - 20
  2. Spring onion -2 small sized chopped
  3. Garlic - 10 small sized peeled and chopped
  4. Tomato - 1 large chopped
  5. Pepper powder - 1 tsp
  6. Cooking Oil - 2 tbsp
  7. Ginger - 1 tsp
  8. Vinegar - 1 tsp
  9. Soya Sauce - 1/4 tsp
  10. Salt - to taste

Instructions

  1. Remove the stem part of the red chillies.
  2. Then soak the red chillies in hot water atleast for 10 mins. Then drain the red chillies and transfer it to a mixer.
  3. Add the drained water to the mixer along with the chopped tomato. Then grind it to a fine paste form.
  4. Add water little by little and keep grinding till you get a smooth paste.
  5. Heat oil in a pan, add in the chopped onion and chopped garlic.
  6. Then add the red chilli paste and let it simmer in a low flame for 3-5 mins or till the oil starts leaving sides.
  7. Then add soya sauce, vinegar, pepper powder and required salt. Cook it for 5 mins in a low flame.
  8. Turn off the flame. Let it cool down completely and store in an airtight jar.
  9. Use the sauce with rice, starters or potato chips.
