Potato Tacos

Ingredients to make Potato Tacos

  • For the stuffing:
  • 4 boiled potatoes
  • 1/2 cup sweet corn kernels
  • 1 medium sized onion
  • coriander leaves- few
  • White sauce 4-5 tablespoons
  • 4 tablespoons butter
  • salt as per your requirement
  • Taco chapatis- 8
  • 2 and 1/2 cups of maida/ flour
  • salt as per taste
  • water as per requirement
  • 1 tomato- chopped

How to make Potato Tacos

  1. To make the taco chapatis, knead the dough as you knead for regular chapatis and keep it aside.
  2. To prepare the stuffing, in a pan add butter to heat, once the butter is melted, add in the onions and saute till it becomes translucent. Then add in the corn kernels.
  3. Next add the white sauce and salt. Stir well.
  4. Now add the potatoes and give a nice and delicate stir to them. Add in the coriander leaves.
  5. To make the tacos, roll out a medium sized chapati (the chapati should be a little thin then the regular one).
  6. Roast it on a pan till it's nicely cooked, then rub butter on both the sides.
  7. Add the stuffing on half side of the chapati. Put in the chopped tomatoes and fold the chapati.
  8. Add butter on top and it's done.

My Tip:

If you want it a little hot, you can also add chopped green chillies as per your taste.
