ABOUT Warm Bok Choy Salad RECIPE

A very easy salad to make and have it on the side. This salad is best eaten warm and each bite should have a crunch to it.

Ingredients Serving: 3

  1. 1 packet bok choy
  2. 1/2 Red Bell Pepper
  3. 1/2 Yellow Bell Pepper
  4. 1 tsp Dark Soy sauce
  5. 1/2 tsp rice wine vinegar
  6. 1/2 tsp sugar
  7. 1 tsp garlic minced
  8. 1/2 tsp Ginger grated
  9. 1/2 tsp black sesame seeds lightly toasted
  10. 1/2 tsp white sesame seeds lightly toasted
  11. 1 tbsp cashew nuts
  12. 1 tbsp walnuts Chopped
  13. Salt and pepper to taste
  14. 1 tbsp olive oil

Instructions

  1. Wash and drain the bok choy thoroughly making sure it's clear of any grit. Either cut the bok choy in halves or separate each section of the bok choy.
  2. Cut the bell peppers in vertical strips. Then combine the soy sauce, vinegar, sugar, salt, and pepper in a small bowl. Whisk it well.
  3. Heat oil in wide non-stick pan. Add ginger and garlic and saute for a few seconds. Now add in the bell peppers and saute on a medium high flame for a minute.
  4. Add the bok choy and stir fry for a minute or till the leaves look glazy. Then add the soy sauce mixture and mix it well with the bok choy.
  5. Add walnuts and cashew and cook for another 30 seconds.
  6. Remove the bok choy to a serving plate and sprinkle toasted sesame seeds as a garnish.
