Japanese Style Soba in Scallion Sauce

Ingredients to make Japanese Style Soba in Scallion Sauce

  • 1 large packet of soba noodles
  • water to boil the noodles
  • 1 tbsp of finely grated ginger
  • 3 tbsp of finely chopped scallions/ green onion
  • 1 tbsp of neutral oil( an type of salad oil)
  • 1 tsp of rice vinegar
  • 1 tsp of light soy sauce
  • sesame seeds to toss in

How to make Japanese Style Soba in Scallion Sauce

  1. Into a mixing bowl, add in the rice vinegar, light soy sauce, the grated ginger and the scallions. Drizzle in the oil and whisk it all for the dressing.
  2. Set a pot to boil water. Drop in the soba noodles and boil it for approximately 3 minutes. (Check the package for instructions)
  3. Drain the noodles and wash it under running cold water.
  4. Toss it in the prepared vinaigrette. Sprinkle the sesame seeds and check the seasoning.
