ABOUT Jackfruit Roti (Mangalore special) RECIPE

Prepared with rice, jaggery and coconut, it is then wrapped in banana or saguwan leaves and steamed.

Ingredients Serving: 8

  1. Ripe jackfruit pieces (approx 1 bowl or more)
  2. Jaggery 1/2 kg (As per sweetness)
  3. 1 and 1/2 cup raw rice (soaked for atleast 4 hours)
  4. A pinch of turmeric powder
  5. 2 fresh grated coconut
  6. 4-6 peppercorns
  7. Roasted cashews, a handful
  8. 1/2 cup chopped coconut pieces
  9. Salt 1 and 1/2 tsp

Instructions

  1. Melt the jaggery and strain it. In a blender add the rice with very little water and grind into a coarse paste. Remove and place in a mixing bowl.
  2. Next, in the blender add in the jackfruit pieces, melted jaggery and coconut. Add it in batches and make a thick paste, add in very little water if required. Remove into a mixing bowl, then mix in the rice paste and this paste.
  3. Next add in the salt, crushed pepper and turmeric powder. Mix it well.
  4. Add in the roasted cashew nuts and thinly chopped coconut pieces. Mix it well, it will become a thick batter.
  5. Use banana leaves or saguwan leaves to wrap this batter, this is the traditional method. (At my place it's not available, so I used foil, you can use banana leaves inside the foil.)
  6. Tear a foil and add 2 spoons of batter in the centre, gently fold in the sides as you wrap a sandwich. Place them immediately in a steamer and steam for approximately 10-15 mins. Let it cool, then unwrap and slice it.
