Thai Basil Fried Rice

Ingredients to make Thai Basil Fried Rice

  • Small grain rice - 2 cups
  • capsicum - 1
  • carrot - 1
  • cabbage - small piece
  • French beans - 8
  • Extra firm tofu - 200 grams
  • Oriental curry powder - 1 table spoon
  • chilli sauce - 1 tea spoon
  • Soya sauce - 2 teaspoon
  • vinegar - 1 table spoon
  • Chopped garlic - 1 table spoon
  • Chopped Thai red chillies - 2
  • Chopped spring onion greens - little
  • Thai basil - 8 leaves
  • salt - as per taste
  • pepper - as per taste
  • oil - 3 table spoon

How to make Thai Basil Fried Rice

  1. To cook the rice, take one big vessel and fill it with 10 cups of water, 1 spoon of oil and a little salt. When it starts boiling, add in the washed and drained rice.
  2. Cook this in a open vessel until it is done. It takes anywhere between 7 to 8 minutes. Once cooked, drain this rice in a colander and keep it aside for cooling.
  3. Chop all the vegetables, chillies, garlic, spring onion and keep it aside. Make rectangle pieces of the tofu, marinate it with salt and pepper and keep it aside.
  4. Take one bowl, mix in the masala powder, vinegar, soy sauce, chilli sauce and keep it ready.
  5. Take one big and wide wok, add in 2 tsp of oil . Once it is hot, add in the marinated tofu and fry it a little. Then remove and keep aside.
  6. In this same wok, pour in the remaining oil, when it is hot add in the garlic, chillies then add in the chopped veggies.
  7. Fry this until the veggies are done. Then sprinkle salt, pepper, pour in the masala-vinegar paste which we have mixed earlier.
  8. When it boils, add in the cooled rice. Check for seasoning, if needed add salt or pepper powder.
  9. Garnish with torn basil leaves, chopped spring onion and pan fried tofu.

My Tip:

Instead of oriental curry powder I have used MDH dal makhni powder. Instead of thai chillies, I have used home grown bird eye chillies.
