Ingredients to make Kayan Thi Pebya ( Eggplant & Tofu Mashed)

  • Eggplant 1 big
  • Tofu 150 grams
  • onion 1 medium
  • garlic 1 tsp finely chopped
  • Green chilli 1
  • turmeric 1/2 tsp
  • Madras curry powder 1 tsp
  • Soy sauce 2-3 tsp
  • Spring onion leaves 1/2 cup
  • salt to taste
  • oil 2 tbsp

How to make Kayan Thi Pebya ( Eggplant & Tofu Mashed)

  1. Peel the skin of the roasted egg plant and coarsely mash the pulp. Also mash the tofu well. Then mix both of these ingredients together.
  2. Finely chop the onions and garlic.
  3. Heat oil and stir fry the chopped onions and garlic till they turn brown. Add in the turmeric and curry powder, mix it well.
  4. Next add in the chopped green chillies and soya sauce.
  5. Now add the Eggplant-Tofu mash into the above onion mixture and stir well.
  6. Add in the chopped coriander and spring onion. Then add in the salt and mix it lightly.
  7. Garnish with slices of spring onion or greens as per choice.

My Tip:

It tastes good when it's freshly made. Do use freshly roasted eggplant for the effect.
