ABOUT Hotteok (Korean Sweet Pancakes) Indian twist by Me RECIPE

Hotteok is a korean pancake filled with the sugar syrup inside . However , I decided to do some innovation and came up with this idea to suit the tastebuds of Indians . Ingredients Serving: 8

  1. For the Dough
  2. 2 cups flour
  3. 2 tsp yeast
  4. 2 tbsp Sugar
  5. 1 1/2 cup lukewarm water (measuring cup)
  6. FOR THE FILLING (Shaahi Kheer )
  7. 1 cup rice ; soaked , drained , dried nd grinded .
  8. 1 litre milk
  9. Condensed milk about half a can
  10. Sugar can also be used instead of condensed milk
  11. 4 tbsp milk powder
  12. A Tsp of cardamom powder
  13. 100 gm fresh cream
  14. 1/4 cup Mixed nuts ( pistachios and almonds ) slivered

Instructions

  1. FOR THE DOUGH :-
  2. Put the lukewarm water in a mixing bowl and add sugar and yeast followed by dough . Mix it well .
  3. Let the dough rise . For this , it should sit with a closed lid for about an hour at room temperature .
  4. Once it is done , mix well.
  5. The dough should be thick enough just like a pancake batter. Make sure that it's not like any ordinary roti flour . This step is really very important . It should be of a pouring consistency .
  6. Your dough is ready !!
  7. FOR THE FILLING (SHAAHI KHEER )
  8. In a non stick pot , put in the milk .
  9. Take the milk powder and mix it well with as little water as possible .
  10. Once the milk starts boiling and has been reduced to 3/4th of it's original quantity , put in all the other ingredients except the nuts .
  11. Keep stirring the kheer on high flame until it becomes thick .
  12. The kheer should be quite thick as we'll be using this as a filling .
  13. Garnish well with the nuts .
  14. And our shaahi kheer is ready !!!
  15. FOR THE HOTTEOK !
  16. In a heated pan on low flame , drizzle a tsp of oil .
  17. With the help of a spoon , put in a small portion of the fermented batter to make a nice small pancake .
  18. Wait for 2-3 mins or until the pancake looks like it's starting to get cooked .
  19. An important point to remember is that these should be cooked at low flame .
  20. At this point , put some kheer on the pancake .
  21. Cover with a lid and wait for a few seconds .
  22. Next , top the kheer with another layer of pancake batter .
  23. Let this cook for about another 2 mins before cautiously flipping the now sandwitched pancake .
  24. Wait until the other side is cooked well .
  25. Carefully bring it out on a plate and enjoy !
