Ingredients to make Veg Chow mein

  • 100 gms dry noodles
  • Handful of chopped button mushrooms
  • Handful of bean sprouts
  • Fistful of julienned carrots
  • Fistful of sliced bell peppers
  • Bunch of spring onion
  • Few broccoli florets, handful
  • 2 - 3 tbsp sesame oil (or any oil)
  • salt as needed
  • 1/2 tsp white pepper powder / black pepper powder
  • 2 - 3 cloves Garlic
  • 1 tsp light soy sauce
  • 1/2 tsp Dark Soy sauce

How to make Veg Chow mein

  1. Cook the noodles as per the packet instructions in boiling water. Drain the water and add some oil to the noodles, mix it well. Then keep it aside.
  2. Heat oil in a pan (any oil) and saute the crushed garlic in it until it sweats. Then add in the julienned carrots and saute for a minute. Then add in all the other veggies except the bean sprouts, spring onion green part and saute them all together.
  3. Once the veggies are more than half cooked, add in the bean sprouts and cook for 2 - 3 minutes. Then add the noodles and stir fry everything well in the oil for another 2 - 3 minutes.
  4. Once the noodles are well coated in the oil and fried well, add in the salt and white pepper powder. Mix it well, then add in the light soy sauce first.
  5. Next add the dark soy sauce and mix it well so that the noodles is properly coated well in the sauce.
  6. Lastly add the green part of the spring onion, give it a nice stir in a high heat and do not forget this final touch. Sprinkle some sesame oil (sesame oil only) and toss everything well together once, then turn off the stove.

My Tip:

The initial oil can be anything, vegetable oil or olive oil but the final seasoning is to be done only with sesame oil which adds great flavor to the dish. Do not skip the soy sauce as it is the critical ingredient in chowmein. Use veggies as per your choice, I didn't have mushrooms, you can add them and also feel free to include savoy cabbage or bok choy. Make it more healthy by increasing the quantity of veggies and sprouts when compared to the noodle quantity.
