ABOUT Thai Veg Green Curry RECIPE

Thai green curry, a creamy and fragrant dish made from fresh ingredients. The paste stays well for a week when refrigerated. This curry tastes great with rice.

Ingredients Serving: 2

  1. 5 nos green chillies
  2. 3 nos shallots
  3. 2 pods garlic
  4. 1/2 inch Galangal
  5. 2 sticks of Lemon Grass, lower portion only
  6. 3 nos Kaffir (Lemon leaves)
  7. 1 tsp Lemon rind
  8. 5 stems of Fresh Coriander, roots only
  9. 1 tbsp peppercorns
  10. 1 tsp coriander seeds, roasted
  11. 1 tsp cumin seeds, roasted
  12. 1 no Carrot, sliced
  13. 3 nos Baby corn, slit
  14. 1 cup Mushroom, sliced
  15. 1/2 cup Bell Peppers, chopped
  16. 250 ml Coconut Milk, canned / packet
  17. 1 tsp oil
  18. Salt to taste

Instructions

  1. From the green chillies to the cumin, grind all the ingredients together by adding very little water and make it into a paste.
  2. Heat oil in a pan, add 1/2 cup of green curry paste and fry it well, then add in the vegetables, 2 tbsp water and cook till they are almost done.
  3. Pour in the coconut milk and cook in a low heat, then add in salt and cook for 3 mins. Then turn off the heat.
  4. Serve it hot with rice.
