ABOUT Chicken Stir Fry with Mixed Vegetables RECIPE

A quick stir fry recipe which can be made impromptu for unexpected guests. For this stir fry, I have made use of Sambal Olek, a spicy chilli paste of Malaysia. The addition of chicken is optional for vegetarians as this dish has a variety of vegetables used.

Ingredients Serving: 2

  1. 1 cup boneless chicken diced
  2. 1/2 zucchini sliced and quartered
  3. 1/4 cup diced carrots
  4. 3 sweet peppers or 1 red bell pepper diced
  5. 1 small head broccoli (florets)
  6. 1 tbsp finely minced garlic
  7. 1 tbsp cornflour
  8. 4 tbsp water
  9. Salt and pepper to taste
  10. 2 tbsp crushed roasted peanuts
  11. Oil for stir frying
  12. For the Sauce:
  13. 1 tsp Dark Soy sauce
  14. 1 tbsp Sambal Olek/ Red chilli-garlic paste
  15. 1 tsp rice vinegar
  16. 1 tbsp tomato sauce/ketchup
  17. 2 tsp honey
  18. 1 cup chicken stock

Instructions

  1. Wash and drain the chicken. Pat dry with a kitchen napkin. Marinate the chicken with salt and pepper to taste. Leave it aside for 15 minutes.
  2. Meanwhile, heat oil in a large wok/nonstick pan. Stir fry continuously the broccoli, carrots, zucchini, and peppers till they are glazy but still retain their crunch about 4 minutes on a medium heat. Then remove and place in a bowl.
  3. Clean the pan. Heat a little oil again. Add in the garlic and saute for a few seconds. Add in the chicken and stir fry continuously till it's cooked thoroughly. Transfer to a plate.
  4. Combine all the ingredients mentioned under the sauce and give it a good whisk.
  5. Dissolve the cornflour with water to get a slurry.
  6. Wipe clean the pan again and add in the prepared sauce to the pan. Simmer on a medium heat for couple of minutes. Then add in the cornflour slurry. Simmer it for a minute.
  7. Add the chicken and vegetables to the sauce and mix it thoroughly. Saute for another minute. Adjust the salt and pepper if required.
  8. Finally, add in the crushed peanuts and stir to mix well. Then turn off the gas.
  9. Remove to a serving bowl and serve it with steamed rice.
