Lemon Grass Broth Soup (Tom Yum)

Ingredients to make Lemon Grass Broth Soup (Tom Yum)

  • lemon grass 2 stalks
  • cilantro 1/2 bunch
  • Basil leaves 4-5
  • cloves 2
  • peppercorns 5
  • 2 cups vegetables (mushrooms, bean sprouts, broccoli, cabbage, carrots, baby corns)
  • Tofu/ cottage cheese 200 gms
  • lemon juice 2 tsp
  • ginger 1 inch
  • Garlic 2 cloves
  • oil 2 tsp
  • Salt and pepper to taste

How to make Lemon Grass Broth Soup (Tom Yum)

  1. Put 5-6 cups of water in a pan and boil it. Add in the roughly chopped lemon grass, cilantro and basil to it. Also add in the cloves and peppercorns.
  2. Simmer the gas and let it cook for 15-18 mins. This will bring out all the nutrients and taste to the broth. Then sieve the broth.
  3. In a pan, heat oil and add in the finely chopped ginger and garlic to it. Saute them till the raw smell disappears.
  4. Now add in all the vegetables that have been chopped in thin slices. Saute them for 2-3 minutes. (I like the crunchiness of vegetables so I did not cook it for too long.)
  5. Now pour the broth into the vegetables. Bring it to boil and add in the tofu/ cottage cheese.
  6. Mix it well, then add in the salt, pepper and lemon juice.
  7. Turn off the gas and serve it hot.

My Tip:

Originally it's made using kafir leaves and galangal, but I've changed it a little according to the availability of the ingredients without compromising on taste.
