Ingredients to make Roasted / Grilled Tomato Paneer Sandwich

  • 4 tomatoes, halved
  • 2 garlic cloves, crushed and finely chopped
  • 1 tbsp olive oil
  • salt as per taste
  • Ground black pepper to taste
  • 8 bread slices
  • 1 tbsp butter, room temperature
  • Fresh basil leaves 4-5
  • 1 tbsp dry thyme
  • 1 and 1/2 cup paneer (cottage cheese) grated

How to make Roasted / Grilled Tomato Paneer Sandwich

  1. In a medium bowl, toss together the tomatoes, garlic, olive oil, salt and pepper.
  2. Grill it in a microwave for 6 mins or you can roast it in an oven at 170 degrees for 20 mins.
  3. Heat a non-stick pan over medium high heat. Spread butter on the sides of the bread. With the butter side down, top it with the grated paneer, roasted tomato, thyme and basil leaves.
  4. Place the sandwich on the pan and cook until the bottom is golden brown for about 3 minutes. Then flip, press with a spatula and cook the other side until it's crispy and golden brown.
  5. Serve it immediately with any sauce or chutney.
