ABOUT Burmese Pumpkin curry with Tamarind RECIPE

This recipe is very similar to Indian style cooking that is tangy, spicy and sweet.

Ingredients Serving: 4

  1. Pumpkin 400 gms
  2. Tamarind paste 2 tbsp
  3. Tamarind pulp boiled in water
  4. Salt to taste
  5. Turmeric powder 1/2 tsp
  6. Chilli flakes 1 tsp
  7. Mint paste 1 tsp (Grind fresh mint with 1 pod garlic and vinegar)
  8. Green chillies chopped 2
  9. Oil 2 tsp
  10. Water 1 cup
  11. Ginger 20 gms paste
  12. Garlic 3 pods crushed
  13. Fresh coriander leaves chopped

Instructions

  1. Heat oil in a pan, add in the turmeric powder on a medium heat.
  2. Then add in the onion, garlic, ginger and saute for 1-2 minutes.
  3. Add in the pumpkin pieces, salt and saute for 3-4 minutes.
  4. Add in the tamarind paste, green chilli and chilli flakes.
  5. Then pour in water, cover and cook for 15-20 minutes.
  6. Add in the mint paste, check the salt consistency and simmer for 3-4 minutes.
  7. Turn off the gas and garnish with fresh coriander leaves and ginger juliennes.
  8. Serve it with boiled jasmine rice.
