Burmese Pumpkin curry with Tamarind

Ingredients to make Burmese Pumpkin curry with Tamarind

  • pumpkin 400 gms
  • tamarind paste 2 tbsp
  • tamarind pulp boiled in water
  • salt to taste
  • turmeric powder 1/2 tsp
  • chilli flakes 1 tsp
  • Mint paste 1 tsp (Grind fresh mint with 1 pod garlic and vinegar)
  • Green chillies chopped 2
  • oil 2 tsp
  • water 1 cup
  • ginger 20 gms paste
  • garlic 3 pods crushed
  • Fresh coriander leaves chopped

How to make Burmese Pumpkin curry with Tamarind

  1. Heat oil in a pan, add in the turmeric powder on a medium heat.
  2. Then add in the onion, garlic, ginger and saute for 1-2 minutes.
  3. Add in the pumpkin pieces, salt and saute for 3-4 minutes.
  4. Add in the tamarind paste, green chilli and chilli flakes.
  5. Then pour in water, cover and cook for 15-20 minutes.
  6. Add in the mint paste, check the salt consistency and simmer for 3-4 minutes.
  7. Turn off the gas and garnish with fresh coriander leaves and ginger juliennes.
  8. Serve it with boiled jasmine rice.

My Tip:

Original recipe says to add fish sauce but I didn't use it. I made it pure vegetarian.
