Ingredients to make Wingko Babat Cake (Indonesian Recipe)

  • Glutinous Rice flour (Tepung Keton) 250 gms
  • egg whites 2
  • egg yolks 2
  • Caster sugar 1 cup (200 gms)
  • Desiccated coconut 1 and 1/2 cup
  • coconut milk 200 ml
  • Vanilla essence 1 tsp

How to make Wingko Babat Cake (Indonesian Recipe)

  1. Beat the eggs whites and sugar well until they are creamy. Add in the coconut milk and mix it well.
  2. Now add in the rice flour, coconut and vanilla essence and mix it well.
  3. Pour the mixture into a greased baking plate. Beat the eggs yolks and spread it evenly over the cake.
  4. Bake at 200 degrees celsius till it turns golden brown. (approx 15-20 minutes )
  5. Let it cool, then cut and serve.
