ABOUT Honey Garlic Eggplant RECIPE

Fried Chinese eggplant coated in a honey garlic sauce topped with sesame seeds and served with rice. Fragrant and delicious!

Ingredients Serving: 4

  1. Japanese Eggplant 2
  2. Capsicum/Bell pepper - 2 tbsp, chopped
  3. Oil to fry
  4. Garlic 5 cloves, minced
  5. Ginger 1/2 inch, minced
  6. Red chillies 3
  7. Sesame oil 1 tsp
  8. Honey 2 tbsp
  9. Soy sauce 2 tbsp
  10. Ground pepper 1 tsp
  11. Sesame seeds for garnishing
  12. Green onions/coriander - to garnish
  13. Fluffy white rice to serve

Instructions

  1. Cut the eggplant into 3/4 inch sticks.
  2. Heat oil in a deep-sided skillet to 182 degrees celsius. Fry the eggplant in small batches. Flip it if needed. Fry it for about two minutes until lightly golden brown. Don't soak it in oil for a long time. Remove it from the oil and drain it on a cooling rack.
  3. In a small cup, mix in the honey, ground pepper and soy sauce. Then keep it aside.
  4. In a pan, heat up 1 tsp of sesame oil and cook the garlic and chilli on a medium heat until it's slightly golden, make sure it is not browned. Then add in the honey-soy sauce mixture.
  5. Turn the heat to medium high so that the mixture bubbles, thickens and turns into a sticky texture.
  6. Toss the fried eggplant with the sauce and garnish it with sesame seeds, scallions and coriander.
  7. Serve it immediately with rice or any grain of your choice.
