Chinese Eggplant with Spicy Garlic Sauce

ABOUT Chinese Eggplant with Spicy Garlic Sauce RECIPE

Other than just simple roasting, it's a wonderful party dish with chillis, garlic, soy sauce and a touch of black vinegar to balance the flavors out.

Ingredients Serving: 1

  1. 2 tablespoons cooking oil, divided
  2. 3 small eggplants cut into long strips
  3. 2 cloves garlic, finely minced
  4. 1 red chilli pepper, finely diced
  5. 1 tablespoon ginger, finely minced
  6. 1 stalk green onion, chopped
  7. 1 tablespoon soy sauce
  8. 1 tablespoon black vinegar
  9. 1/2 teaspoon sugar

Instructions

  1. In a wok or saucepan over a high heat, add in 1 tablespoon of the cooking oil and swirl to coat the wok.
  2. When the wok is hot, add the eggplant in a single layer. Cook for 1 minute and flip over each piece so they cook evenly. Cook it for another 2-3 minutes while flipping occasionally.
  3. Push the eggplant aside in wok and add 1 tablespoon of cooking oil. Add in the garlic, red chilli peppers, ginger and green onion. Stir these aromatics until they become fragrant.
  4. Combine these aromatics with the eggplant and stir fry for 1 minute. Add in the soy sauce, black vinegar and sugar, stir to combine all.
  5. Serve it immediately.
