ABOUT Basil Chicken RECIPE

This National cuisine of Thailand is light, aromatic, spicy, sweet and tangy. Though it doesn't need an introduction with Thai joints mushrooming all over the world, this cuisine has a complex appeal with an interplay of taste.

Ingredients Serving: 4

  1. 3 tbsp oil
  2. 6 Onions, finely chopped
  3. 4 Garlic cloves, chopped
  4. 2 Bird's eye chillies
  5. 600 gms chicken breast, chopped into bite size pieces
  6. 3 tbsp fish sauce
  7. 2 Cups Basil Leaves, chopped
  8. 2 tbsp Brown Sugar
  9. 2 tbsp Light Soya Sauce
  10. 1 tsp chilli paste
  11. 1/2 tsp Salt
  12. 1/2 cup water
  13. 2 tsp corn starch

Instructions

  1. Heat oil in a skillet. Then add in the onions and saute till it's translucent.
  2. Next, add in the garlic and chillies, let it cook for a minute. Now add in the chicken and cook till it's done.
  3. Add half of the basil leaves.
  4. In a bowl, combine the brown sugar, fish sauce, soya sauce, salt and chilli paste and add it to the chicken.
  5. Cook it for a minute. Then pour in the water and corn starch and cook for another minute.
  6. Add rest of the basil leaves and saute for a minute.
  7. Serve it with steamed rice.
