ABOUT Chilli Paneer RECIPE

Chili Paneer is a popular item in any Indian Reastaurent. Here paneer or Indian cottage cheese are cooked in a flavourful Chinese spiced gravy.

Ingredients Serving: 2

  1. For frying the Paneer:
  2. Paneer- 100 grams (cut into cubes)
  3. Oil- 1 cup
  4. Corn flour-1/4 cup
  5. Plain flour (maida)- 4 tablespoons
  6. Soy sauce -2 teaspoon
  7. Black pepper powder- 1 teaspoon
  8. Salt to taste
  9. Water as needed, approx 4 tablespoons for the above mentioned measurements (adjust the water level,the batter should not be very thin or thick )
  10. For making the gravy:
  11. Grated ginger- 1 teaspoon
  12. Garlic cloves- 8 finely chopped
  13. Onion- 2 big (cut into 1 inch cube )
  14. Green capsicum- 1 (cut into 1 inch cube)
  15. Spring onions (white parts)- 1/4 cup (chopped)
  16. Green chilies- 6 (cut into thin slices)
  17. Soy sauce- 1 tablespoon
  18. Green chilli sauce- 1/2 teaspoon
  19. Red chilli sauce- 1 teaspoon
  20. Tomato sauce- 1 teaspoon
  21. Vinegar- 1/2 teaspoon
  22. Ajinomoto or Monosodium Glutamate or Chinese salt- 1 pinch (optional )
  23. Black pepper powder- 1/2 teaspoon
  24. Oil- 2 tablespoons
  25. Sugar-1 teaspoon
  26. Corn flour -2 teaspoons
  27. Salt to taste
  28. Spring onions, green parts -1/4 cup (chopped)

Instructions

  1. Combine all the ingredients for frying the paneer in a bowl. Make a smooth batter. Then coat the paneer pieces with batter.
  2. Heat oil in a pan and deep fry the paneer pieces in hot oil over a high flame till the paneer is light brown in colour. Drain on absorbent paper and keep aside.
  3. To make the gravy, heat 2 tablespoons of oil in a pan.
  4. Add chopped garlic, fry until the garlic turns into light brown in colour. Add in the cube onions, cube capsicum, spring onions white and green chillies and saute over a high flame for 1-2 minutes.
  5. Add in the soya sauce, red chilli sauce, green chilli sauce, salt and sugar. Mix and stir on a high flame for 3-4 minutes. Keep stirring continuously.
  6. Add in the corn flour water mixture, stir well and allow it come to a boil. Let the sauce thicken. Then add in the fried paneer cubes and simmer them in sauce for 1-2 minutes.
  7. Add in the tomato sauce, 1/4 cup chopped spring onions, 1/2 teaspoon black pepper, ajinomoto, mix and toss well for 1 minute on a high flame while stirring continuously.
  8. Take it off the gas and garnish it with chopped spring onions (green parts).
  9. Serve it with chicken, egg and sea fried rice.
