ABOUT Volcano Chicken RECIPE

Very very hot and spicy chicken side dish with bell pepper cooked with ghost chilly.

Ingredients Serving: 4

  1. Boneless cubed chicken 500 grams
  2. Refined oil for frying
  3. Onion diced 2
  4. Coloured bell peppers diced 1 cup
  5. Chopped ginger 1 teaspoon
  6. Chopped green 1 teaspoon
  7. Ginger and garlic paste 1 tablespoon
  8. Ghost chilli paste very little
  9. Tomato ketchup 1 tablespoon
  10. Vinegar 1 teaspoon
  11. Light soysauce 1 teaspoon
  12. Salt to taste
  13. Pepper powder to taste
  14. Sugar 1 teaspoon
  15. Egg 1
  16. Corn flour 2 tablespoons
  17. Corn starch slurry for thickening

Instructions

  1. Marinate the chicken cubes with the egg and 2 tablespoons of corn flour, ginger and garlic paste, little salt and pepper powder for 30 minutes.
  2. Heat refined oil in a wok and deep fry the chicken cubes to a very light golden colour.
  3. Remove the excess oil from the wok.
  4. Add chopped ginger and garlic. Fry for a minute.
  5. Add the onions and bell peppers.
  6. Stir fry the ingredients.
  7. Add the tomato ketchup, ghost chilly paste, sugar, vinegar, soysauce.
  8. Mix well and add a cup of water.
  9. When water boils add the corn starch slurry and add the fried chicken cubes.
  10. Mix everything well and drizzle little more oil for an extra shine.
  11. Serve with noodles or rice.
