Mixed Fried Rice

Ingredients to make Mixed Fried Rice

  • Basmati Rice - 250 grams
  • Onions -1
  • Celery - 1 stick
  • Chillies - 3-4 (finely chopped)
  • Ginger - 1"(finely chopped)
  • Garlic - 3-4 (finely chopped)
  • Carrots - 1/2 (finely chopped)
  • Capsicum - 1/2 piece different colour (finely chopped)
  • Chicken - 2 full breast (cooked with salt and pepper and finely chopped)
  • Prawns - 100 grams (cooked with salt and pepper )
  • Egg-3 (Beaten with salt and pepper)
  • Vinegar-1 teaspoon
  • Soya Sauce - 1-2 teaspoon
  • Salt & Pepper to taste
  • Sesame Oil - As much as you dare
  • Butter - 2 teaspoon

How to make Mixed Fried Rice

  1. Soak basmati rice for 1/2 hour. Drain and lightly fry the soaked rice with a mixture of butter and sesame oil.
  2. Cook rice in salted water until 90% cooked (al dente). Drain and cool it.
  3. Heat sesame oil in a wok.
  4. Add chopped onion, celery, green chillies, ginger and garlic.
  5. Saute until fragrant (awesome smell).
  6. Add the chicken and saute till it gets a brown colour.
  7. Similarly add the shrimp and saute.
  8. Add the vegetables starting with the carrot and ending with capsicum. Saute well.
  9. Make a hole in the middle of the wok pushing vegetables to the side.
  10. Add beaten eggs to the mixture and scramble it with your spoon. Stir well combining the mixture.
  11. Add the liquid and saute until the liquid is absorbed by veges and meat.
  12. Add the cooked and cooled rice to the woke and toss well.
  13. If you dont know how to toss then like me use a table spoon. This makes sure the rice wont break.
  14. When nicely mixed switch off flame and garnish with spring onions.
My Tip: Always cook the rice (as far as possible ) the previous day. Cooking is all about taste. Taste your dish after each step. you can ass or delete as per preference. Keep the items all ready near the stove before you start cooking. Maintain a medium high all throughout. Keep stirring/tossing.
