Tom Kha Gai, Thai Coconut Chicken Soup

Ingredients to make Tom Kha Gai, Thai Coconut Chicken Soup

  • chicken stock 2 cups
  • chicken thigh 1 pound
  • Small button mushrooms 150 grams
  • coconut milk 1 1/2 cup
  • lemon grass 1
  • ginger root (Not the actual ginger, the one that has mango taste and flavour) 15 small rounds
  • lemon leaves 3
  • Chillies 3
  • Fish sauce 2 to 3 teaspoons
  • Palm sugar 1 teaspoon

How to make Tom Kha Gai, Thai Coconut Chicken Soup

  1. Cut all, ginger, lemon grass, chilies, mush rooms,chicken into small pieces.
  2. Heat chicken stock, add chicken and all other chopped ingredients except mushroom, then put salt and chilly flakes. Cook for 20 minutes.
  3. Then remove chicken pieces from the gravy, keep aside and remove all other ingredients. We don't need those.
  4. Strain it, then again keep on fire, put mushrooms, coconut milk, fish sauce and cook for 8-10 minutes. Then just before removing from fire, add lemon juice and spring onion, if you like coriander leaves, you can add.
  5. Put some chilly oil on top, mix and have it. You can add more fish sauce, salt, sugar or lemon juice according to your taste.

My Tip:

You can use cooked chicken pieces. If you like to keep all vegetables, you can but it is better to remove it.
