Whole Wheat Honey and Oatmeal Cookies

Ingredients Serving: 8

  1. 1/2 cup - butter softened
  2. 1/2 cup - granulated sugar
  3. 1/2 cup - honey
  4. egg - 1
  5. 1-1/2 cups - quick cooking rolled oats
  6. 1 cup - whole wheat flour
  7. 1/4 teaspoon - salt
  8. 1 teaspoon - cinnamon
  9. 1/2 teaspoon - baking soda
  10. 1 teaspoon - vanilla extract

Instructions

  1. Cream the butter and sugar until light and creamy.
  2. Add honey, egg and vanilla and beat till smooth.
  3. In a separate bowl, whisk together all the dry ingredients.
  4. With a spatula, mix in the dry ingredients until fully blended. Make sure no trace of flour is visible.
  5. Cover and chill the dough for at least 1 hr.
  6. Drop the batter on a lined cookie sheet with a scoop.
  7. Bake in a preheated at 180 - 200 degree celsius oven for 15 - 20 minutes or until evenly browned.
  8. Remove from oven and allow cookies to cool 2 to 3 minutes before removing from baking sheet. Store in a cool dry place in an airtight container.
