Ingredients to make Saag chicken

  • Water to blanch the spinach
  • 1 kilogram fresh spinach (cut the roots and clean thoroughly)
  • 500 gram boneless chicken (cut into 1 inch pieces )
  • 2 large red onions (sliced very thin)
  • 2 tablespoons ginger and garlic paste
  • 5 tablespoons tomato puree
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 tablespoon coriander powder
  • 1 teaspoon ground cumin
  • 5 small green cardamom
  • 5 small whole cloves
  • 2 small cinnamon sticks
  • 2 large dried red chillies
  • 5 tablespoons vegetable oil
  • 2 tablespoons ghee
  • salt to taste.

How to make Saag chicken

  1. Blanch the spinach and make a puree of it.
  2. Heat oil in a wok. Put the flavourings (cardamom, cinnamon and cloves) and dry chillies into the oil. When the spices crackle add the sliced onions and cook them till soft.
  3. Add the chicken pieces and cook. Add all the other dry powdered spices, ginger garlic paste , the tomato puree and salt. Cover and cook till the chicken is done..
  4. Now add the spinach puree to the cooked chicken.
  5. Mix well and cook for 2 to 3 minutes. Turn off the heat.
  6. Pour into serving bowl, pour the ghee on top . Serve hot with naan or roti.
