A spicy paste bursting of a variants of flavours

Harissa

Ingredients to make Harissa

  • 120g Dried Red chillies
  • 4 garlic cloves
  • 1-2 tbsp olive oil
  • 1 tsp caraway seeds
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp salt

How to make Harissa

  1. Soak the chillies in a bowl of hot water for 30 mins.
  2. Heat a skillet and add the caraway, coriander and cumin seeds. Roast over low heat for 2 mins.
  3. In a mortar and pestle grin the seeds.
  4. Remove the seeds and stems of the chillies and grind together with the spice powder, garlic and salt.
  5. Add some olive oil and process in a blender to make a smooth paste.
  6. Use or store in refrigerator.
