Ingredients to make Aloo Saag

  • Potato - 500 gms (peeled & diced)
  • Spinach - 1 bunch (250 gms)
  • Onion - 1 (large)
  • Garlic - 2 cloves
  • Ginger - 1 inch piece (grated)
  • Whole red chillies - 2/3
  • Mustard seeds - 1 tsp
  • cumin seeds - 1 & 1/2 tsp
  • Turmeric powder - 1 tsp
  • Oil for frying
  • Salt to taste
  • Tomato for garnishing

How to make Aloo Saag

  1. Heat oil in a kadhai, toss in the cumin seeds, garlic, grated ginger and onions.
  2. Fry till onions become translucent. Add in the potatoes.
  3. Add the spices, red chillies and salt. Mix, cover and leave for few minutes on low flame stirring occasionaly.
  4. Check if the potatoes have become tender. (Spear a fork into a potato to check).
  5. Meanwhile, wash the spinach with cold water, chop and keep ready to add.
  6. Add the spinach, let it wilt. Make sure you don’t over cook the spinach as it will become dull green.
  7. Serve hot by garnishing with small pieces of tomato to add colour.

My Tip:

Tip: Using cold water to wash the Spinach helps it to retain its colour. Donot over cook also for the same reason.
