ABOUT Carrot Capsicum Rice RECIPE

A very simple and quick recipe to use up left over rice for kids tiffins

Ingredients Serving: 2

  1. 1 cup - Cooked Rice (put salt and a teaspoon of oil while cooking) - preferably long grained
  2. 1/2 cup - grated carrot (the orange carrots are better than the red ones for this dish)
  3. 1/4 cup - very finely chopped capsicum (I have used only green as that is what I had at home..one cud use all 3 colors, increase decrease quantity proportionately)
  4. 1 - big onion, very finely chopped..

Instructions

  1. - Prepare the rice as you would normally. Here I have used previous night's left over rice, cooked using steam method
  2. In a non-stick pan take some oil (you don't need much)
  3. Warm the oil and put in the chopped onions..sauté till translucent. Then add the carrots..sauté for a minute..then add the capsicum and sauté for another minute..finally add the cooked rice and some salt)..and cover it and leave it to steam
  4. Garnish with chopped corriander or mint and you are ready to serve..
  5. I don't put any chillies in it..it tastes good without it..but if you wish you could sprinkle some red chilli powder or sambhar powder..
  6. Also you can increase or decrease the amount of veggies or also introduce other finely chopped and sauted veggies like green pease, cauliflower etc..but my kids love it this way..plain and simple..
  7. It's a very forgiving dish, so you can modify to your needs, tastes etc..
