ABOUT Palak Paneer Paratha RECIPE

Palak Paneer Paratha is one of the healthiest and tastiest breads that you can ever think of for tiffin. I would say that it is a balanced meal in itself. It has wholewheat flour and amaranth flour that form the source of carbohydrates. The palak (spinach) act as the source of vitamins and minerals. And the protien rich paneer (home-made cottage cheese) and the whey water completes the balanced meal. Hence it is a totally nutritious paratha.

Ingredients Serving: 2

  1. Wholewheat flour 1 cup
  2. Amaranth flour (Rajgira atta) 1/2 cup (Can be replaced with wholewheat flour also).
  3. Paneer (Home-made cottage cheese) 3/4 cup
  4. Palak (Spinach) 1/2 cup
  5. Onion 1/2
  6. Green chili 2
  7. Ginger garlic paste 1 tsp
  8. Red chili powder 1/2 tsp
  9. Turmeric powder 1/8 tsp
  10. Corriander leaves (chopped) 2 tbsp
  11. Whey Water or normal water 1/4 to 1/2 cup
  12. Salt 1 tsp
  13. Ghee 2 tbsp (Optional)

Instructions

  1. Take paneer in a bowl.
  2. With clean fingers crumble it gently to form small crumbs.
  3. Add in the chopped onions, green chillis, and ginger garlic paste.
  4. Add in the the turmeric powder, red chili powder and salt.
  5. Next add the corriander leaves and palak.
  6. Mix these ingredients well.
  7. Now add the flours and salt.
  8. Add water little by little to form a soft dough.
  9. Take out small balls from the dough.
  10. Dust the working surface with flour generously.
  11. Roll out each dough ball to form roti disks.
  12. You may not get perfect circles, as the dough is not smooth, but that is alright.
  13. Heat a pan.
  14. Cook each paratha, flipping sides, until done.
  15. Drizzle few drops of ghee on one side.
  16. You can have this for tiffin with pickle or curd.
