ABOUT Chilly Chicken RECIPE

Succulent Chicken pieces coated in a thick batter and fried until crisp then added to a garlicky sauce, its the sort of food we need in the winters to warm up a cold evening.

Ingredients Serving: 4

  1. For the marination-
  2. 250 grams boneless chicken
  3. 2 tsp. chilli sauce
  4. 2 tsp. soya sauce
  5. ¼ Tsp Pepper Powder
  6. For dredging-
  7. 2 tbsp plain flour / maida
  8. 2 tbsp corn flour
  9. ¼ tsp. red chili powder
  10. salt as per taste
  11. For the sauce-
  12. 2 tsp. soya sauce
  13. 1 tsp chilli sauce
  14. ½ tsp. red chilli powder
  15. 1 Tsp. Vinegar
  16. ½ tsp. sugar
  17. 1 medium onion cubed
  18. 2 tsp garlic finely chopped
  19. 1 tsp Ginger, finely chopped
  20. ½ cup cubed bell pepper / capsicum
  21. 4 green chilies slit and deseeded
  22. 1 sprig of spring onion chopped (optional)
  23. spring onions for garnish
  24. Oil for Deep frying

Instructions

  1. Marinate chicken with chilli sauce, soya sauce & pepper powder, at least for 45 minutes. 2 hours is best.
  2. Sprinkle corn flour, plain flour, red chilli powder on the chicken along with salt and mix well. Prepare the sauce- Combine soya sauce, chili sauce, red chili powder, vinegar and ½ tsp sugar to a bowl and mix well.
  3. Heat oil in a pan and deep or fry till the chicken is golden and crisp. Keep stirring to fry evenly. Do not over fry, it tends to turn hard.
  4. When it is cooked, drain on a kitchen tissue.
  5. Remove off excess oil from the pan, just keep 2 spoons oil in the pan. Add garlic and ginger(if using) fry for about a min, add onions, capsicum, spring onions and green chilies and fry till they turn slightly soft for about a minute.
  6. Pour the sauce that was prepared at step 3. Let the sauces bubble up well. If you want more gravy, then add some chicken/veg stock mixed with a tsp of Cornflour.
  7. Add the fried chicken and some salt, Mix well. Taste and adjust seasoning.
