ABOUT Banana & Oats Blender Muffins RECIPE

I love these muffins for my kiddo as they have no refined flour and no sugar. It has the goodness of oats and honey. They are filling and adding banana keeps them really moist. I have added flax seed on top with some oats to add to the nutritional value. These muffins do not rise much.

Ingredients Serving: 6

  1. 2 large overripe bananas( take 3 if they are small to medium size)
  2. 3/4 cup Oats
  3. 1/4 cup honey( if you dont like adding honey add brown sugar)
  4. 3 wholewheat bread slices
  5. 1 tsp vanilla essence
  6. 2 Eggs
  7. A pinch of salt
  8. 1/4 cup olive oil
  9. Milk if needed to adjust the batter consistency (I did not require any)

Instructions

  1. Blend everything in a blender.
  2. Pour in muffin cups. Top with oats, flaxseed.
  3. Preheat oven at 180 degrees C. Bake for 15-20 mins until cooked from the middle.
  4. Leave it to cool. Take out of the mould. Enjoy hot or cold.
  5. Or with a scoop of ice cream, banana and chocolate chips.
