Lapsi Upma

Ingredients to make Lapsi Upma

  • 1 cup lapsi
  • 1 small onion, finely chopped
  • 3 cups water
  • 1/2 cup chopped vegetables like carrots, capsicum
  • 1 tablespoon green corainder leaves, finely chopped
  • salt to taste
  • 1 finely chopped green chilli
  • 1/4 teaspoon thin mustard seeds
  • 4-5 fresh curry leaves
  • 1/4 teaspoon haldi
  • 1/4 teaspoon red chilli powder
  • A few shallow fried cashews.

How to make Lapsi Upma

  1. In a pressure cooker add 1 tablespoon oil.
  2. Keep the flame low.
  3. Add the mustard seeds and let them splutter.
  4. Add the curry leaves and green chillies.
  5. Add the onion and cook till soft.
  6. Add the lapsi.
  7. Stir fry it for 3-4 minutes.
  8. Add red Chilli Powder, salt and haldi.
  9. Add chopped vegetables.
  10. Stir for a minute.
  11. Add 3 cups water.
  12. Pressure Cook for 2 whistles on low flame.
  13. Squeeze a few drops lemon juice on it.
  14. Garnish With Green Coriander Leaves and cashewnuts.
  15. Serve hot.
