Creamy Spicy Pumpkin Pasta

Ingredients to make Creamy Spicy Pumpkin Pasta

  • pasta 2 cups boiled in salt water for 7- 8 mins
  • pumpkin 100 gms , boiled and pureed
  • carrot 1/2 grated
  • capsicum 1 small grated
  • mix herbs , dried oregano , dried parsley , mint 1/2 tsp
  • salt as per taste
  • fresh thick cream 1 tsp diluted in 2 tsp water
  • chilli Powder 1/2 tsp
  • chilli flakes 1/2 tsp
  • pepper powder 1/4 tsp
  • mozzarella cheese 2 tsp
  • onion 1 chopped
  • garlic 3 pods crushed
  • olive oil 3 tsp
  • butter 1/2 tsp
  • vegetable stock 1 cup (you can use boiled vegetables water )

How to make Creamy Spicy Pumpkin Pasta

  1. Boil pasta and drain water in a colander , sprinkle 1 tsp olive oil
  2. Heat oil in a nonstick pan
  3. Fry onion and garlic for 3-4 mins
  4. Add grated carrot and capsicum
  5. Saute for 4-5 mins
  6. Now add pumpkin puree
  7. Mix and saute for 1-2 mins add chilli powder , pepper powder
  8. Now add boiled pasta and salt
  9. Add diluted fresh cream and vegetable stock
  10. Add chilli flakes
  11. Now add cheese , heat for 2-3 mins more
  12. Switch off gas
