Vegetable Colorful Rice

Ingredients to make Vegetable Colorful Rice

  • 1 bowl cooked Basmati rice
  • Chopped Vegatables (Onion, Carrot, French Beans, Green Peas, Potatoes,cauliflower)
  • One onion (Medium Size)
  • 3-4 Green chilli (chopped)
  • 5-6 curry leaves (Chopped)
  • 1/2 Spoon each mustard and cumin Seed
  • 1/2 Spoon of turmeric Powder
  • salt to taste
  • ghee/Oil (for fry)
  • 1/2 spoon of sugar (to taste)
  • 1/2 spoon lemon juice
  • coriander Leaves for garnishing (optional)

How to make Vegetable Colorful Rice

  1. Heat oil in the kadhi/pan. Add jeera, mustard seed and wait till they crackle, then saute well
  2. Add chopped chilli, curry leaves, onion, and fry it for a few minutes.
  3. Add all chopped vegetables, turmeric powder, and salt. Stir till it is cooked.
  4. Add rice and lemon juice and mix them for a few minutes.
  5. Turn off the flame. Garnish the rice. And let it cool for a while.
  6. Pack in the lunchbox.
