Kashmiri Pulao

Ingredients to make Kashmiri Pulao

  • for cooking rice -
  • 1 cup Basmati rice
  • 1 cup milk
  • 1 Cup water
  • Few strands of saffron
  • 1 tbsp ghee
  • 1 tbsp sugar
  • salt
  • spices (2 cardamom,1 star anise,1bayleaf,1stick cinamon,4 cloves)
  • for pulao -
  • 1 tbsp ghee
  • 1 tsp balck cumin seeds
  • 1 tsp fennel seeds
  • 1/2 cup mixed nuts roasted in ghee and chopped (cashew, almonds and raisins)
  • 1/2 cup chopped parboiled vegetables(carrot,peas)
  • 2 tbsp paneer cubes cut into small size
  • 1/2 cup tinned fruits(pineapple,cherry)
  • 1/2 fresh apple chopped
  • salt
  • 1/2 tsp dry ginger powder
  • 1/2 tsp black pepper powder
  • 1/2 tsp cardamom powder

How to make Kashmiri Pulao

  1. To prepare rice -
  2. heat ghee in a pan
  3. add rice (soaked for 15 min and then dried on a cloth) and fry for a min
  4. add water, milk,salt, saffron spices and sugar
  5. cover the lid and cook till rice are 95% done
  6. cool to room tempreture
  7. for preparing pulao -
  8. heat ghee in a pan. add spices
  9. add vegetables and fry for a min
  10. add roasted nuts, rice, paneer cubes, fruits, salt, cardamom powder, dry ginger powder,black pepper powder
  11. toss properly
  12. garnish with some fruits and nuts
  13. Serve.
