Palak Paneer with Makkai Roti

ABOUT Palak Paneer with Makkai Roti RECIPE

Palak paneer is popular North Indian curry made with blanched spinach and soft paneer. It is served with makkai roti.

Ingredients Serving: 4

  1. 10 cups chopped spinach
  2. 1 1/2 cups paneer
  3. 2 tbsp ghee
  4. 3/4 cup finely chopped onion
  5. 4 garlic (grated)
  6. 1/2 tbsp grated ginger
  7. 1 teaspoon green chillies
  8. 3/4 cup fresh tomato pulp
  9. Salt to taste
  10. 1 tbsp garam masala
  11. 2 tbsp fresh cream
  12. (For makkai ki roti)
  13. 2 cups cornmeal
  14. 3/4 cup water
  15. 1/2 tbsp carrom seeds
  16. 1/4 tbsp salt.

Instructions

  1. Blanch the spinach in a vessel with boiling water for 2 to 3 minutes.
  2. Drain and rinse with cold water and keep aside.
  3. Blend in mixer to a smooth puree and keep aside.
  4. Heat desi ghee in a kadhai .add the onions and saute on a medium flame till they turn translucent
  5. Add garlic,ginger,green chillies and saute on a medium flame for 1 to 2 minutes.
  6. Add the tomato pulp and saute till the mixture leaves ghee.
  7. Add the spinach puree and 2 t blsp of water
  8. Mix well and cook on a medium flame for 2 minutes.
  9. Add the salt ,garam masala and fresh cream and mix well.
  10. Surve with makkai ki roti.
  11. Makai ki roti -
  12. Take all ingredients in a large mixing bowl
  13. Add water little by little and start kneading.
  14. Kneading is an essential part of this flatbread making.
  15. Knead the flour with the of heel of your hand.
  16. Add water carefully you need a smooth dough which is not too tight or sticky
  17. Now let it rest for at least half an hour.
  18. Knead again to make it soft
  19. Divide the dough into tennis ball sized portions
  20. Cut a wax paper 16 by 14 inch size.
  21. Keep it on a wooden board
  22. Keep a ball of dough on the paper. Fold the paper and with a rolling pin roll out a chapati of medium thickness.
  23. Place the griddle over high flame
  24. Once hot,place the roti gently on griddle.
  25. Then lower the flame to medium and flip the roti
  26. Allow it to cook on the other side
  27. Roast the roti till it gets Brown spots.it took me 5 minutes to cook one roti
  28. Smear roti with ghee or butter
  29. Serve hot with spinach paneer.
