ABOUT Fruit Salad Muffin RECIPE

A light and fluffy muffin recipe which is easily adaptable for any tinned fruits. So quick and easy to mix up and pop into the oven, no creaming required. Ideal for lunch box

Ingredients Serving: 12

  1. 2 eggs
  2. 450 g canned fruit salad drained
  3. 3/4 cup fruit juice
  4. 100 g butter melted
  5. 2 cup self-raising flour
  6. 1/2 cup Sugar

Instructions

  1. Mix all ingredients together until just combined.
  2. Spoon into well greased muffin Pans.
  3. Bake at 180C for 15-20 minutes, until the tops are lightly browned and spring back when touched.
  4. This recipe makes 12 muffins.
