Ingredients Serving: 2

  1. 2 Tortillas for chicken burritos
  2. 4-5 Tomatoe slices
  3. 3-4 pepper Rings
  4. 3-4 Cucumbers slices
  5. Mix of beans,Meat,Olives,Rotel and Sour Cream

Instructions

  1. To make burritos - Boil chicken until tender. Approximately 30 minutes.
  2. Chop chicken into bite sized pieces.
  3. Melt butter in skillet or saute pan and saute diced shallots, bell pepper, and mushrooms until tender.
  4. Combine chicken, shallots, pepper and mushroom mixture with cream of chicken soup and Rotel.
  5. Place approximately 1 cup of mixture into center of tortilla.
  6. Wrap into burrito and place into baking dish. Repeat until all burritos have been made. Bake in 350 degrees F in oven for 35 minutes.
  7. And place burritos in lunch box and place all the above ingredients mentioned.
