ABOUT Sticky Rice Sweet Pongal RECIPE

Sweet pongal with a twist. Made using sticky rice and without dal.

Ingredients Serving: 3

  1. Sticky rice 1 cup
  2. jaggery grated 1 cup
  3. Cardamon powder 1/4 tsp
  4. Ghee 5 tsp
  5. Raisins 3 tsp
  6. Cashewnuts broken 3 tsp
  7. Coconut thinly sliced into 1-2 cm 3-4 tsp
  8. Water 2 cups

Instructions

  1. Add the washed rice in a pressure cooker. Pour 2 cups of water and cook for 3-4 whistles. Let the pressure go off by itself.
  2. Pour little water in a pan and add the grated jaggery. On a low flame stir and melt it. Strain and keep this aside.
  3. When the pressure from the cooker is down, remove the lid and mash the rice coarsely.
  4. Add the filtered jaggery syrup to the cooked rice.
  5. Add cardamom powder. Mix and cook on a medium flame till the jaggery syrup blends well with rice. When it begins to bubble up well switch off the flame.
  6. Heat the ghee in a pan add coconut pieces and fry them till they turn aromatic. Add them to the rice.
  7. To the same pan add cashews and fry till golden switch off the flame then add raisin and stir it in the hot ghee. Add this to the rice.
  8. Mix well altogether n serve hot or cold.
