Ingredients to make Tomato Rice with yogurt, Tofu puffs & Fruits

  • For the tomato rice
  • Basmathi rice - 1/2 cup
  • Water 1 cup - for the rice
  • tomato - 2 big
  • Water - 1/2 cup for tomato juice
  • ghee - 2 tblsp
  • onion - 1/2
  • Green chilli - 1/2
  • cinnamon - 1 small stick
  • cloves - 2
  • Aniseed - 1 tsp
  • bay leaf - 1
  • salt - 1/2 tsp
  • turmeric - 1/2 tsp
  • coriander powder - 1 tsp
  • chili powder - 1/2 tsp
  • curry leaves - 10
  • coriander leaves - few
  • For the tofu puff
  • Ready made tofu puff - 3 slices
  • oil - 1/2 tsp
  • salt - to taste
  • cumin powder - 1/2 tsp
  • Others
  • Fresh yogurt - 1/2 cup
  • grapes 1/2 cup

How to make Tomato Rice with yogurt, Tofu puffs & Fruits

  1. Wash and cook the basmathi rice in pressure cooker.
  2. Blend tomatoes with water.
  3. Take a pan, add ghee, bay leaf, cinnamon, clove and aniseed and let the masala infuse into ghee well.
  4. Add onion, curry leaves and saute well.
  5. Add tomato juice, coriander powder, turmeric, chilli powder and salt. Let it cook until the water in the juice evaporates and a thick paste forms
  6. Let the tomato mix cool down.
  7. Meanwhile, wait until the basmati rice is cooked and cool down to room temperature.
  8. Mix the tomato-masala mix and basmati rice. Garnish with Coriander leaves.
  9. Pack it in the box.
  10. Take another box and pack the fresh yogurt.
  11. For the tofu puffs, cut the ready made tofu puffs into big cubes.
  12. Take a pan and add oil.
  13. Add tofu puffs, salt and cumin powder.
  14. Saute for exactly 5 minutes so that they get slight crispy
  15. Allow it to cool down to room temperature.
  16. Pack the tofu puff in another box.

My Tip:

You may serve with onion raita.
