Lemon Quinoa with Vegetables

Ingredients to make Lemon Quinoa with Vegetables

  • Quinoa 1 cup
  • water 2 cups
  • oil 1.5 tbsp
  • lemon juice 1 tbsp
  • mustard seeds 1tsp
  • Dry Red Chillies 2
  • Split black lentils (urad dal) 1 tbsp
  • Split bengal gram (chana dal) 1 tbsp
  • peanuts 3tbsp
  • turmeric powder 1/4 tsp
  • asafoetida 1/8 tsp
  • onion (chopped) 1/4 cup
  • carrot (chopped) 1/4 cup
  • Green beans (chopped) 1/4 cup
  • Green peas 2 tbsp
  • corn 2 tbsp
  • curry leaves 1 sprig
  • salt to taste

How to make Lemon Quinoa with Vegetables

  1. Rinse quinoa by placing in a fine mesh strainer under cold water for 2 minutes. Add this drained quinoa to a medium sauce pan with water by adding sufficient salt and bring to a rolling boil.
  2. Simmer and let it cook for another 10 minutes or till all water has been absorbed.
  3. Heat oil in a pan and splutter mustard seeds.
  4. Add the dry red chillies, curry leaves, urad dal, chana dal and the peanuts. Stir for few minutes.
  5. Next add onion and saute till they are transparent.
  6. Now add turmeric powder and asafoetida, give it a quick stir.
  7. Add in the vegetables and salt. Saute until the vegetables are done. It may take 3-4 minutes.
  8. To this add freshly squeezed lemon juice and switch off the flame.
  9. Mix with the cooked quinoa.
  10. Serve with pappad pickles and plain curd.

My Tip:

For a rich flavour you can substitute oil with ghee.
