Ingredients to make Blueberry Cheese Cake

  • Biscuits (Digestive Marie) 6-7.
  • Blueberry Jam- 1.5 cup
  • Melted butter 2 tbsp
  • Hung curd 1/2 cup
  • Whippedcream 3/4 cup
  • sugar 3 tbsp
  • Gelatine 2 tsp
  • water 1 tbsp
  • Vanilla- 1 tbsp

How to make Blueberry Cheese Cake

  1. Take curd in a muslin cloth and hang for an hour to drain out all the water from the curd
  2. Crush the biscuits in a grinder to a semi fine powder form. In a pan melt the butter and add it to the biscuit mixture and mix it well such that the mixture becomes moist.
  3. Pour the biscuit mixture in the spring foam tin and press it nicely to the base of the tin.
  4. Chill it for half an hour in freezer so that the biscuit base is set nicely. In a bowl pour the curd and mix it nicely with sugar till sugar is well incorporated.
  5. In a separate bowl whip the cream nicely till stiff peaks.Fold the cream in curd mixture.
  6. Add vanilla essence and mx wellIn a small bowl take water and add gelatine to it and let it bloom for a few minutes.
  7. Warm it in microwave for a few seconds to allow gelatine to dissolve.
  8. Add the gelatine to the curd and cream mixture.Take out the biscuit base andpour the cream mixture over it.
  9. Smooth out the surface nicely. Allow the cheesecake to set nicely for 2 to3 hours.
  10. Now add a layerof blueberry jam over the cheesecake mixture and allow it to set for another 1 hour
  11. Your blueberry cheesecake is ready.serve chilled and enjoy
