Kashmiri Fresh Fruit Pulao

Ingredients to make Kashmiri Fresh Fruit Pulao

  • 3 cups of cooked rice or leftover rice.
  • Fresh fruits cubed 2 cups
  • cinnamon sticks 2 to 3
  • cardamom pods 3 to 4
  • cloves 4 to 5
  • bay leaves 3
  • butter 3 tbsp
  • saffron strands soaked in milk few
  • caraway seeds 1 tsp
  • Almonds pistachios and raisins 1/2 cup
  • onions fried 2. (Optional)
  • Fresh cream 3 tbsp

How to make Kashmiri Fresh Fruit Pulao

  1. Cook rice and keep aside.
  2. Heat butter in a pan and add all the whole masalas and the nuts.
  3. Saute them for 2 mins.
  4. Add the fruits and the cream now.
  5. Mix them well. Add the saffron soaked milk and let it simmer for 2 minutes more.
  6. Transfer this to the pot of rice and give it a good mix.
  7. Garnish with fried onions if desired and serve.

My Tip:

You can add green chillies or chilli flakes if you wish. I added only cloves. Fruits can be of your choice. I used apples, papaya, peach, pineapple, tender coconut and pears. If you are not using fried onions, the cooking time will decrease to just 5 mins.
