ABOUT Kashmiri Fresh Fruit Pulao RECIPE

Amazingly scented flavourful rice loaded with fresh fruits just makes a perfect lunch box idea for your family. It is an exotic dish, yet so simple to make. Can make this even with the leftovers just as I did today.

Ingredients Serving: 4

  1. 3 cups of cooked rice or leftover rice.
  2. Fresh fruits cubed 2 cups
  3. Cinnamon sticks 2 to 3
  4. Cardamom pods 3 to 4
  5. Cloves 4 to 5
  6. Bay leaves 3
  7. Butter 3 tbsp
  8. Saffron strands soaked in milk few
  9. Caraway seeds 1 tsp
  10. Almonds pistachios and raisins 1/2 cup
  11. Onions fried 2. (Optional)
  12. Fresh cream 3 tbsp

Instructions

  1. Cook rice and keep aside.
  2. Heat butter in a pan and add all the whole masalas and the nuts.
  3. Saute them for 2 mins.
  4. Add the fruits and the cream now.
  5. Mix them well. Add the saffron soaked milk and let it simmer for 2 minutes more.
  6. Transfer this to the pot of rice and give it a good mix.
  7. Garnish with fried onions if desired and serve.
