Baigan in Coconut

Ingredients to make Baigan in Coconut

  • Brinjal 250 gm
  • tamarind 1 small piece
  • water
  • fenugreek seed 1/2 tspn
  • Arhar dal uncooked 1 tspn
  • Green chilli 5
  • coriander leaves 2 tbspn
  • Pinch of turmeric powder
  • Crushed black pepper 6 to 7 pieces
  • coriander seeds roasted and crushed 1/2 tspn
  • salt
  • sugar 1 tbspn
  • coconut grated 1 cup

How to make Baigan in Coconut

  1. In a big bowl take warm water and add the tamarind
  2. Now add the brinjal pieces and cover it till the brinjal colour changes
  3. Once done, remove the brinjal from water
  4. In a pan heat oil and add fenugreek seed. Fry it and then remove from oil
  5. In the same oil add arhar dal, crushed black pepper and coriander seed
  6. When aroma arises add the brinjal, pinch of turmeric, salt and mix and cover
  7. When the brinjal softens add coriander leaves. Mix properly
  8. Now add sugar, coconut, green chilli. Mix properly
  9. Remove from flame
